Meet Julie
Owner Julie Dalton, with 30 years of experience in top bars and restaurants across London, New York, and LA, has brought a sophisticated cocktail and dining experience to St Andrews. Committed to the local community, she emphasizes locally sourced ingredients, staff training, and mentorship for female entrepreneurs.
Julie’s flagship, The Adamson, opened in 2012, blending steak, seafood, and cocktails. It quickly became a local favourite, expanded in 2015, and has earned numerous awards, 2 AA Rosettes, and a spot on Peter Irvine’s "Scotland the Best" top 120 restaurants.
In 2017, she launched HA+CH, a casual spot for brunch or socializing, showcasing creative dishes made from fresh, local ingredients at accessible prices.
Last year, Julie opened The Physician, a cocktail bar known for visually striking, inventive drinks featuring smoke bubbles, handcrafted infusions, and botanicals. Despite its recent opening, it has already been recognized as a finalist in the Thistle Awards’ Best Bar or Pub and named New Bar of the Year in the Scottish Bar and Pub Awards.
